 400 g Spaghetti
 150 g Pancetta or guanciale (cut into small cubes)
 4 Eggs
 100 g Parmesan cheese
 1 tbsp Olive oil
 Salt
 Black pepper — freshly ground

Step 1: Bring a large pot of salted water to a boil. Cook spaghetti until al dente according to package instructions. Reserve ½ cup of pasta water, then drain.

Step 2: While pasta cooks, heat olive oil in a large skillet over medium heat. Add pancetta and cook until crispy, about 4–5 minutes. Remove from heat.

Step 3: In a bowl, whisk together eggs, Parmesan cheese, and a pinch of black pepper until smooth.

Step 4: Add hot pasta to the skillet with pancetta. Pour in egg mixture and quickly toss to coat, adding reserved pasta water a little at a time until creamy.

Step 5: Top with extra Parmesan and freshly ground black pepper. Serve immediately.
